Arctic Bites Brings Pola Rolls to Toronto

Kensington Market’s Arctic Bites opened its doors early last week. The new shop specializes in rolled ice cream, or “Polarolls.” Inspired by the streets of Thailand, this is the first ice cream shop to offer the practice of “cold-fried” ice cream in Toronto.



The Thai-inspired ice cream shop offers bowls of rolled up ice cream in a variety of flavours including Love at First Bite (strawberry), Your Morning Cup (coffee), Cinnamon Toast Crunch and Taro with a Twist. The ice cream is made to order, and rolled in front of customers.


The technique starts with pouring cream onto custom made cold-plates, that reach -20 C, and then ingredients are added, depending on the chosen flavour. The ice cream is then smoothed out, thickening the cream as it freezes on the cold plates. The thin layer of now frozen cream is carefully rolled into what they’re calling “polarolls.”



Placed into bowls, the ice cream is completed with toppings like strawberries, Oreos, Fruit Loops, and marshmallows. The freezing temperature of the cold plates allows for ice molecules to form, which gives Arctic Bites ice cream a unique creamy texture.
